Cod Salad

Ingredients for 4 people

Cooking time 15 min.

Recommended wine: Greco di Bianco

Cod fillet gr. 500

Extra virgin olive oil gr. 150

2 garlic cloves

2 hot fresh chillies

Tomatoes gr. 300

50 g parsley

Onion gr. 100

6 fresh basil leaves

Black olives in brine 100 gr

Wild oregano leaves



Steam cook the Cod for about 8/10 min.

Meanwhile cut the garlic and onion in thin slices and leave them in a bowl with water and ice. Cut the tomatoes in slices, chop the parsley and finally pit the olives.

After cooked debone the fish, remove the skins and tear the meat into small piecesand place it in a bowl. Drain the water from the onion and the garlic and add it onto the fish. Also add the tomatoes, parsley, olives and chilli and mix well.

Dress the salad with extra virgin oil, salt, a sprinkling of oregano and finally add the basil leaves and mix well.

Let it stand at room temperature for a few minutes, stir again all the ingredients and serve.
