Seafood cuisine from Tonino Napoli, Chef and Patron of the Pantragruel restaurant,located in a magnificent building from the 500 at the old town of Rende. The restaurant prepares only fish with extreme care, sensitivity and the in-depth knowledge of the raw ingredient. Accompanied in the kitchen by his wife Silvana whilst his son Cadore runs the main restaurant’s salon. The dishes of great taste and refinement are trimmed and harmonized with the fruits of the land, vegetables andlocal herbs such as anise from the Sila National Park, wild fennel, and the “porchiacca”.
Because the Chef is a worshiper and a standard-bearer for Calabrian cuisine like few others chefs, here we have a few of his recipes: “Prawns with liquorice”, “Parmigiana sea,” “Mediterranean flavourSwordfish with Tropea’s red onion and Belmonte Calabriatomatoes”.
At Christmas the speciality desert is the “Fried Christmas Turdillo covered in figs honey”. For someone like Toni Napoli who loves Calabrian wine the cellar can only offer wine from this region.
